Production Notes
Fermented in two stainless steel alfalfa seed bins, one with all whole berries and the other with 50% whole cluster. 11 day fermentation then free-run directly to two once used barrels and the remainder pressed to four twice used barrels. All barrels racked separately(barrel to barrel) for long-term evaluation. Boutes, Taransaud, and Quintessence barrels used.
