The aromatic discovery of an orange blossom under the fallen leaves of hunting season. Sharp blackberry skin cuts through the mint tea on the mid palate. Firm yet not aggressive, it refrains from being too much with just a kiss of stone ground raspberry. Nettles, mint, orange marmalade, vanilla bean, cocoa.
Double D Vineyard
Fermented in two stainless steel alfalfa seed bins, one with all whole berries and the other with 50% whole cluster. 11 day fermentation then free-run directly to two once used barrels and the remainder pressed to four twice used barrels. All barrels racked separately(barrel to barrel) for long-term evaluation. Boutes, Taransaud, and Quintessence barrels used.
